Preschool Projects
Rainbow on Your Plate is offered to about 10 Head Start classrooms per year. It is taught over two sessions and focuses on familiarizing young children with fruits and vegetables as "anytime" foods. Through music, movement, stories and tasting fresh, frozen and canned fruits and vegetables, the children learn that adding color to your meals and snacks helps you to grow and be healthy.
Pumpkin Post and Banana Beat is an educational and fun newsletter includes recipes and regular columns on child feeding challenges, seasonal foods, physical activity, and menu ideas. The series of six newsletters focus on themes about breakfast, fitness, fruits and vegetables, healthy lunches, goal setting and holiday eating.
Operation Frontline's "Eating Right" curriculum is a series of cooking classes for Head Start parents to promote healthy food choices and combines nutrition lessons with kitchen cooking time to help parents feel more comfortable with cooking healthy meals and snacks. Parents receive groceries each week to make meals for their family that they have prepared in class as a group.
Head Start Preschool Teacher Workshops Food Safety and Sanitation, Nutrition and Literacy and Fun with Food are examples of teacher enrichment and professional development projects conducted by the nutrition educator.
